Sweet Cinnamon Biscuits


As I'm typing, I'm thinking to myself..."Seriously, another cooking blog?  There are only three bazillion (yes, that's a number and yes, I'm not exactly math literate) cooking blogs in blogland.  So, why another one?  Here's my answer: "I dunno."  I just really, really, really, love cooking and it often tastes pretty good.  The downside: my cooking often doesn't look, shall we say, bakery or restaurant good.  However, my family and friends have been encouraging me to start writing down my twists on various and asundry recipes, so I've caved in.  This is my first official post.  SCARY!  You will notice a whole lot of dessert type recipes.  Can't help it.  I've got a huge old sweet tooth! 

Anyway, on to the reason you're here.  The recipe.  I've made this recipe countless times.  It is pretty easy to throw together and is sooooooooooooo divine!  It also provides a great basic buttermilk biscuit recipe if you don't want the sweetness.

Sweet Cinnamon Biscuits

Ingredients:

2 c. sifted all-purpose flour
1 Tbsp. baking powder
1 tsp. salt
1/4 tsp. baking soda
1/4 c. vegetable oil
3/4 c. buttermilk
1 stick butter or margarine, softened
3/4 c. granulated sugar
1 tsp. cinnamon

Icing:
1 c. powdered sugar
1/2 tsp. vanilla
2-3 Tbsp. half-and-half

1. Combine flour, baking powder, salt and baking soda in a medium bowl and mix well.  Stir in vegetable oil.  Add buttermilk and stir just until blended.

2. Knead the dough on a lightly floured surface until smooth.  Roll dough into a 15x8-inch rectangle.

3. Preheat the oven to 400 degrees.  Grease a 9-inch round baking pan lightly.

4.  Spread butter over the dough.  Combine granulated sugar and cinnamon in a small bowl and mix well.  Sprinkle over butter.  Sprinkle over butter.  Roll up rectangle, jelly roll fashion, starting from one long side.  Pinch seam and seal.

5.  Cut the roll into 1 1/2-inch slices.  Arrange the slices, cut side up, in prepared baking pan. 

6.  Bake 15-20 minutes.

7.  While the biscuits are baking, whisk together the powdered sugar, vanilla and half-and-half.  Pour over warm biscuits.  Let cool.
